牛肉白菜水饺的家常做法

面粉,牛肉,大白菜,葱,姜,香菜,花生油,香油,料酒,味极鲜酱油,蚝油,十三香,水等等
操作方法
01、牛肉500克用温水冲洗干净先切成小块后再剁成肉泥,放入容器中加入花生油、香油、料酒、味极鲜酱油、蚝油、十三香用筷子顺着一个方向搅拌上劲,为了使包出的饺子鲜嫩多汁搅拌的时候可以打入适量的清水。

02、取适量的面粉倒入容器中一边加水一边搅拌至没有干面粉后,和成表面粗糙的面团醒面30分钟左右,醒到20分钟时揉一次使面团表面光滑,这样包出来的饺子皮不容易破而且劲道

03、葱、姜、香菜择洗干净控干水分后分别剁成葱、姜、香菜末放入腌制肉馅的容器中继续顺着一个方向搅拌均匀

04、大白菜取叶子7片左右清洗干净沥干水分剁成白菜碎,把剁好的的白菜碎根据肉馅的粘稠程度选择是否挤一下水分,放入肉馅中再次用筷子顺着一个方向搅拌均匀即可

05、案板铺撒干面粉取一块醒好的面团搓成长条后揪成大小均匀的面剂子,或者用刀切,根据自己的喜好来选择

06、面剂子上再撒一层干面粉用双手轻轻搓成圆形,按扁后擀成厚薄适中的饺子皮,个人感觉手工擀制的饺子皮比机械加工的就是好吃

07、擀好的饺子皮中间放入足足的馅料对折后捏紧,包成自己喜欢的饺子即可

08、锅中加水煮沸后下入包好的饺子,立即用汤勺的背面向前推散防止粘锅,盖好锅开继续煮制,煮沸后分别点两次凉水分别煮沸,也就是常说的肉馅饺子点两次凉水煮三个锅开

09、煮至饺子漂浮起来并且饺子肚向上鼓起即可出锅,捞起饺子沥水分装入盘中,蘸点蒜泥汁开始享用鲜香多汁的牛肉饺子吧!
